Looking for a new gluten free pancake recipe? One that isn’t loaded with starch but is packed with protein and will get you and your kids off to a great start?

These simple pancakes have just 5 ingredients, take minutes to make, and are guaranteed to please.

Sometimes we need to keep things nut free around my house because of my little nephew who also happens to be a very picky eater. As a result these pancakes using Sunbutter were born and everyone loves them – including Mr. Picky himself.

You can use whichever type of Sunbutter you prefer in this recipe, we like the creamy but the Organic Unsweetened works great too, especially if you want to eliminate refined sugars.

Gluten-free-Sunbutter and Banana-Pancakes

Gluten Free Sunbutter & Banana Pancakes Recipe

Ingredients

2 large bananas, peeled
½ cup Sunbutter
2 large eggs
1 teaspoon baking powder
Grapeseed or vegetable oil, for cooking

Directions

Preheat the oven to 200ºF.

Mash the bananas in a large mixing bowl. Add the Sunbutter, eggs, and baking powder. Mix well.

Heat a skillet or griddle over medium-low heat until a drop of water sprinkled on the pan sizzles immediately. Brush the pan with oil and let heat for a few seconds.

Ladle ¼ cup of pancake batter onto the pan for each pancake. Cook until the bottoms are golden brown and the edges appear dry, about 5 minutes. Gently flip and cook for another minute or until the bottoms are browned and the pancakes feel firm to the touch.

Keep the cooked pancakes warm in the oven while preparing the rest. Serve warm.
