When I was developing gluten-free recipes for my dessert cookbook, I discovered SOLO’s Almond Paste in the local supermarket.

Since then I’ve kept my pantry stocked with a half dozen cans, as I find myself reaching for it all the time, especially when making not only gluten-free but grain-free desserts.

As we all know, when you take out gluten you run the risk of loosing the structure the gluten adds to baked goods. This Almond Paste solves that.

Besides, I live in hurricane country – so a stocked pantry is a must! When torrential downpours happen it is good to be able to make gluten-free cookies!
