“I just wanted to RAVE about your Stove-top Seafood Boil!  I was recently diagnosed with Hashimoto’s Thyroiditis, and my doctor recommended I try a 2 month gluten free diet before we even discuss thyroid meds.  I had no idea what gluten free meant, so I contacted some friends, did some research, and picked up your magazine for the very first time to explore my new food choices.  After 2 days of gluten free eating my whole digestive tract seemed better when I didn’t even know I had a problem, but I all of the sudden felt GREAT!  I unexpectedly lost 5lbs and feel amazing.  Even if this diet doesn’t help my thyroid levels (which I’m fully expecting it will), I will continue on it just based on how great I feel.  Anyway, I have always wanted to do a Seafood Boil, saw your recipe, followed it exactly, and had some close friends over, and it was AMAZING!!!!  So easy, and SO DELICIOUS, everyone LOVED it (and I am not a good cook)!!!!  Thank you so much, for your magazine, your willingness to share your knowledge, and your amazing recipes.  Tomorrow, I’m off to another gathering where I am bringing dessert – Frozen S’Mores from the same magazine!  Thank you!”

I’ve been following the Simply Gluten Free blog for years, and have always loved Carol’s meal ideas, so I was elated when she came out with this cookbook. It is everything I expected and more! . . .  Some immediate favorites were the Shrimp in Romesco Sauce, Asian Noodles and Meat Sauce, and the whole curry menu (Vegetable Curry + Spiced Basmati Rice + Dairy-Free Mango Lassis). I could easily see cooking my way through this cookbook one menu at a time!

You come up with the most gorgeous, adaptable, and doable gluten free recipes. Plus, your photos are not only beautiful, they give us a good idea of what your creations are supposed to look like. I love the idea of individual ramekins for this and am going to add several to my arsenal of kitchen dishes.

I’m thinking this will be a perfect brunch menu for my mom’s June birthday (96, can you believe it!?). Brunch is her favorite way to celebrate. I might even suggest she have a couple of mimosas.   =)

Wow! So I had already checked your cookbook out of the library to give it a “trial run” before deciding to buy (which of course – I immediately put on my amazon list to buy and should have it by Christmas – it is SUCH a good book!). The party cake made for AWESOME vanilla cupcakes (made them before noticing that you actually had a vanilla cupcake recipe in there, lol!) and the No Bake Chocolate Truffle? AMAZING! Oh and do not even get me started on the Snickerdoodles! I use your gluten free flour blend in most all of my baking now, SO happy with it! So yesterday, I decided to give this French Bread a go since we were having homemade soup for supper. I’ve tried baguettes before and they never rose quite well enough and got crispy enough. These? These.were.more.than.I.could.have.EVER.asked for! Thanks for the recipe, love the gluten free blog and the posts on FB!

I’m so thankful for your gluten free website.  My teenage son has celiac disease and I am gluten free, too (I have lupus and Grave’s disease).  Your photography and descriptions of your recipes are so – well, friendly, for lack of a better word!  I feel like your welcoming attitude has made it easier for me to step into this world of gluten free baking and cooking-I get excited to cook whenever I spend time looking over your recipes-which is often!

My youngest son – he’s 14 and wheat intolerant, made 3 of your gluten free Chocolate and Peanut Butter pies for Thanksgiving-I couldn’t eat any (I’m sugar free, too!-ugh!) but my husband and the guests at our Thanksgiving gathering raved about this rich pie!

My 17 y.o daughter has recently discovered she feels much, much better gluten free. I want to support her health so we’ve been experimenting with gluten free cooking but as Thanksgiving approached she was a little sad that some of her favorite things would be off limits.

Fortunately, thanks to sites like yours I was able to make gluten free versions of the things she wanted. In fact, everything that I brought to our family dinner was gluten free and I made her a small amount of GF gravy and these dinner rolls. These rolls were so good that we ate half of them before we ever got to the dinner! My sister made wheat rolls (that are admittedly good) but even with that my non-gf mother was sneaking our rolls into her ziploc baggie to take home!

Thank you so much for this gluten free recipe. My family being newly GF realized we won’t have to sacrifice the things we love to feel better. :)

After finally coming to the realization (and with my doctor’s pushing!) that my stomach does much better when it’s gluten free, I stumbled upon your website late last night. There are so many gluten free recipes that look amazing (and I’m a vegetarian, too) and couldn’t wait to try one. I decided to start with the Vegan African Stew (had spent 3 months living in Africa) and just took it off the stove. Love it! I can’t wait to try more of your recipes.

Just wanted to thank you for the gluten-free pie crust recipe.  I used your flour and your recipe and made delicious pumpkin pie!  I also used your flour and my old favorite double crust recipe for the apple pie and it came out very light, flaky and delicious.  My entire family (who are not gluten-free) said both pies were delicious!
