What better way to celebrate summer than a refreshing and bright beverage that even the kids can enjoy?

Celebrate Summer with a Cherry Lime Spritzer

   As children, my sisters and I were not allowed to drink soda with two exceptions: tummy aches and nights out with our parents when they ordered cocktails before dinner. On the later occasion, we girls always ordered Shirley Temples (ginger ale or 7-Up with grenadine topped with a maraschino cherry). We felt so sophisticated sipping our pretty little drinks. It made the evening that much more special and turned dinner into a bigger celebration. For this reason, Shirley Temples will always hold a special place in my heart.
   So of course when it came time for me to come up with a non-alcoholic summer celebration drink, I came
Cherry Lime Spritzer
Serves 8
¼ cup fresh mint leaves, thinly sliced
¾ cup sugar (more or less to taste)
¾ cup freshly squeezed lime juice (from 6-8 limes)
½ cup maraschino cherry juice
2 liters cold club soda

8 maraschino cherries
8 lime slices
8 sprigs fresh mint
   In a large pitcher, mash together the sliced mint leaves, sugar, lime juice, and maraschino cherry juice with a wooden spoon. Refrigerate until serving time.
   Before serving, add the club soda and stir. Pour over ice into glasses and garnish with cherries, lime slices, and mint.

   The Shirley Temple was named after the famous child star known for her spunk as much as her ringlets. I wonder how many people today even know who she was. I tried to think of a current-day child star to name my own kiddie cocktail after but I am at a loss to come up with anyone sweet and innocent enough – any ideas?
A few notes about this recipe: I used natural maraschinos in this drink to avoid artificial ingredients as much as possible. As far as the sugar goes, I like to use ¾ of a cup, if you prefer your drink more or less sweet, adjust accordingly. Make the base of the drink ahead and refrigerate until serving. At serving time, add the cold club soda.
