Gluten Free Roasted Shrimp Recipe

One of my favorite ways to cook most meats and vegetables is to roast them in the oven. There is something about the high heat that seems to seal in the flavor and bring out the best in most foods.

Shrimp is not something that most people would think of as a candidate for roasting, as it cooks up so quickly. But I happen to live in a place where summer heat and humidity are almost unbearable. As much as I like the idea of throwing a few skewers of shrimp onto the grill, I stop short when I think of having to brave the oppressive air outside, sweltering over an open fire and the voracious mosquitoes the size of hummingbirds.

This Gluten Free Roasted Shrimp Recipe is a great way to get a lot of shrimp cooked up with very little effort. And, as with other foods, the roasting really intensifies the sweetness of the succulent little morsels.

Once roasted, the shrimp can be served as is (I like to throw on a quick garnish of grated lemon peel, chopped parsley and a squeeze of lemon), used for shrimp cocktail, tossed with pasta (gluten free of course!) or made into a delicious salad.

Ingredients

  • 2 pounds shrimp - peeled, cleaned and de-veined, tails left on
  • 1 teaspoon course salt
  • 1 teaspoon freshly ground pepper
  • 4 teaspoons Old Bay Seasoning
  • 1 tablespoon olive oil
  • Juice of 1 lemon

Instructions

  • Preheat oven to 400 degrees.
  • Put shrimp on a sheet pan; add salt, pepper, Old Bay Seasoning, olive oil and lemon juice. Toss to coat and spread shrimp out in an even layer.
  • Roast for 5 – 6 minutes.
