Gluten Free Pomegranate Semifreddo Recipe

Happy New Year everyone!

I hope your holidays were wonderful and that 2009 turns out to be all that you hope for and more.

I have not figured out what New Year’s Resolutions I want to make this year. Well, that is not entirely true. I figured out the ones I want to make but I didn’t think that start smoking, drink more coffee and quit exercising are the resolutions I ought to make.

One of my on-going resolutions is to simplify my life without giving up any wonderfulness.

This little Gluten Free Pomegranate Semifreddo Recipe fits right in with that resolution. It is essentially a no-churn ice cream. Semifreddo means “half cold” in Italian and as the name implies, it never freezes to the rock hard consistency that ice cream can. Whip up some pomegranate juice, confectioner’s sugar and cream, stick it in the freezer and in as little as 4 hours, you are eating ice cream! No churning, no fancy equipment, no returning to the freezer every hour to scrape it, as with granitas. It is simple, simple, simple! And quite wonderful. And of course, it is gluten-free.

Ingredients

  • ¾ cup pomegranate juice
  • 1 lime juiced
  • 1 ¼ cups powdered sugar
  • 2 cups heavy cream
  • 1 pomegranate (seeded) optional

Instructions

  • Whisk together the pomegranate juice, lime juice and powdered sugar until sugar is dissolved. Add cream and whisk (either by hand or with a hand mixer) until soft pink peaks appear.
  • Spoon ice cream into a plastic or glass container with a snug-fitting lid, smooth it down to compact it and freeze for at least 4 hours or overnight.
  • Serve with fresh pomegranate seeds as a garnish, if desired.

    Good luck with your new year resolutions! I like the simplifying w/out taking away from life one :)

    Oooh that sounds good. I love pomegranate. Good thoughts for resolutions. Although I was angry my first day back at work and got stressed out. I was used to being home for 2 weeks with the cats and hubby every day. This might take the edge off.
