Mashed Garlic Cauliflower

Ingredients

  • 2 large heads of cauliflower , cut into equal sized florets
  • 12 garlic cloves , peeled and smashed Kosher salt
  • 4 tablespoons unsalted butter , dairy-free butter substitute, or olive oil
  • ¼ teaspoon freshly grated nutmeg
  • ½ teaspoon freshly ground black pepper
  • ½ cup grated Parmesan cheese or nutritional yeast

Instructions

  • Place the cauliflower and garlic in a pot with salted water and bring to a boil. Cook until the cauliflower is very tender, about 10 – 15 minutes. Drain very well.
  • Place the drained cauliflower and garlic into a food processor and process until smooth. Return the mixture to the pot. Over low heat, add the remaining ingredients and cook, stirring constantly, for 2 minutes to heat through. Season with more salt if needed.
  • Serve hot.
