Ingredients
For the topping:
  • 1 cup canned mandarin oranges
  • 1 tablespoon tamari or coconut aminos
  • 1 tablespoon Dijon mustard
  • 1 tablespoon minced garlic
For the burgers:
  • pounds ground beef or bison
  • 1 tablespoon Dijon mustard
  • 1 teaspoon gluten-free Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 4 slices Swiss cheese omit for dairy-free
  • 8 slices nitrate/nitrite-free ham (such as Hormel Natural Choice or Applegate Farms
  • 4 large pineapple slices fresh is best, but canned is okay
  • Fresh greens for serving.
Instructions
  1. Make the topping first by placing all the ingredients in a saucepan and bringing to a boil. Then lower to a slow rolling boil and let reduce and thicken while you prepare the burgers, approximately 25 minutes.
  2. Mix the ground beef, Dijon mustard, Worcestershire sauce, garlic powder, and onion thoroughly. take 1 slice of Swiss cheese and place it in between two slices of ham. Fold and roll it tightly. Take some of the meat mixture and form a thin patty. Stuff your ham and cheese as close to the center of your patty as possible. Place some more meat mixture over it, essentially sealing your burger. The better the seal, the less likely your burger will “ooze.” Repeat with the remaining meat mixture, ham and cheese to form 4 burgers.
  3. Grill on medium heat for approximately 4-5 minutes on each side, or internal temperature reaches 165ºF. (You may want to grill on foil so cheese doesn’t leak into the coals.) Grill your pineapple slices while the burgers are cooking. Serve the burgers over greens. Top with the grilled pineapple slices and hot orange topping.
