Herbed Goat Cheese Mashed Potatoes

Ingredients

  • 4 pounds Russet potatoes peeled and cut into 2-inch chunks
  • 1 cup half and half
  • 1 cup chicken or vegetable broth
  • 4 ounces soft goat cheese
  • ¼ cup finely chopped scallions
  • ¼ cup finely chopped fresh chives
  • 2 tablespoons finely chopped flat-leaf parsley
  • Sea salt and black pepper to taste

Instructions

  • Place the potatoes in a large pot and cover with cold water.
  • Bring to a boil over high heat.
  • Reduce heat to medium and continue to boil until the potatoes are tender when pierced with a fork, 15-20 minutes.
  • Drain and return the potatoes to the hot pot over low heat.
  • Add the half and half, broth, and goat cheese.
  • Mash until desired consistency is reached.
  • Stir in the scallions, chives, and parsley.
  • Season to taste with salt and pepper. Serve.
