Bacon Wrapped Dates Stuffed with Pistachios and Chives

Ingredients

  • 30-40 Medjool or Deglet dates
  • ¼ cup pistachios shelled and chopped coarsely (plus more for garnish)
  • 8-10 slices bacon each cut crosswise into 4 pieces
  • 2 tablespoons chopped fresh chives  plus more for garnish

Instructions

  • Preheat the oven to 375ºF. Line a baking sheet with parchment paper.
  • Make a small slice in each date to remove the pit. Fill the space with chopped pistachios.
  • Lay a bacon piece on a work surface, sprinkle some chives on top of it, then place a date in the center and roll the bacon around the date. Place the bacon-wrapped date seam side down on the baking sheet. Repeat with remaining dates and bacon pieces.
  • Bake for 20-22 minutes, or until bacon is nicely crisp. Cool for about 10 minutes. Transfer to a serving platter and top with some additional chopped pistachios and chives for garnish.
