Maple Mustard Oven Roasted Salmon

Ingredients

  • 3 tablespoons whole grain or Dijon mustard
  • 1 tablespoon maple syrup
  • 4 (4 ounce) salmon fillets skin on
  • Kosher salt and freshly ground black pepper
  • ¼ cup gluten-free panko-style bread crumbs
  • ¼ cup melted butter or dairy-free butter substitute

Instructions

  • Preheat the oven to 400ºF. Line a baking sheet with foil.
  • Combine the mustard and maple syrup in a small bowl. Season the salmon generously on both sides with salt and pepper. Place the salmon on the prepared baking sheet, skin side down. Brush with the mustard mixture. Top with the bread crumbs and drizzle with melted butter.
  • Bake for 15 minutes and serve.
