Ingredients
  • ½ ripe banana broken into chunks
  • 1 heaping tablespoon unsweetened sunflower seed butter or any nut/seed butter
  • ¾ cup unsweetened coconut milk or almond milk
  • ½ cup gluten-free rolled oats
  • ¼ teaspoon ground cinnamon
  • Pinch of sea salt
Optional toppings:
  • Banana slices
  • Unsweetened shredded coconut
  • Raw cacao nibs
  • Sunflower seeds
Instructions
  1. In a medium bowl, use a fork to mash the banana with the sunflower seed butter. Whisk in the milk. Stir in the oats, cinnamon, and salt. Transfer to a jar or bowl with a lid. Refrigerate overnight.
  2. In the morning, stir the oatmeal a few times. (Add more milk if a thinner consistency is desired.) Add desired toppings and serve.
