Apple Cranberry Baked Oatmeal

Ingredients

  • 4 cups gluten-free rolled oats
  • 1/3 cup coconut sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • ½ teaspoon sea salt
  • 3 cups unsweetened almond or hemp milk plus more for serving
  • 2 large eggs
  • ¾ cup unsweetened applesauce
  • 2 medium apples cored and diced
  • ½ cup dried cranberries
  • ½ cup chopped walnuts or pecans optional
  • Maple syrup for serving (optional)

Instructions

  • Preheat the oven to 350ºF. Grease a 9x13-inch baking dish.
  • In a large bowl, combine the oats, coconut sugar, cinnamon, baking powder, and salt. In a separate large bowl, whisk together the milk, eggs, and applesauce. Pour the wet ingredients over the oat mixture and stir to combine thoroughly. Stir in the apples, cranberries, and nuts (if using). Pour the oatmeal into the greased baking dish.
  • Bake for 35-40 minutes until golden brown and set. Let rest for 10 minutes before serving. Serve with additional milk and maple syrup, if desired.
