Banana Bread Granola

Ingredients

  • 3 cups gluten-free rolled oats
  • 2 cups raw walnuts or pecans chopped
  • 1 cup unsweetened shredded coconut
  • 2 teaspoons ground cinnamon
  • ½ teaspoon sea salt
  • 2 large bananas mashed very well (about 1 cup mashed)
  • 6 tablespoons butter or coconut oil melted
  • 6 tablespoons maple syrup

Instructions

  • Preheat the oven to 325ºF. Line 2 baking sheets with parchment paper.
  • In a large bowl, combine the oats, nuts, coconut, cinnamon, and salt. In a separate bowl, whisk together the mashed bananas, melted butter or coconut oil, and maple syrup. Pour the wet ingredients over the oat mixture and stir to combine thoroughly.
  • Divide the granola between the 2 lined baking sheets and spread it out evenly. Bake for 35-40 minutes until golden brown and fragrant, stopping every 10-15 minutes to stir the granola with a spatula. Cool completely before serving or storing. Store in an airtight container at room temperature.
