Gluten Free Italian Sausage and Polenta Hash Recipe

Gluten Free Italian Sausage and Polenta Hash Recipe

Ingredients

1 (18-ounce) tube Ancient Harvest polenta
2 tablespoons olive oil
1 pound loose Italian sausage (or remove the sausage from casings)
2 red peppers, seeded and chopped
1 large white or yellow onion, cut into thin wedges
2 cloves garlic, minced
1 teaspoon gluten free Italian seasoning
½ cup Parmesan cheese or dairy free substitute
2 tablespoons fresh chives, chopped

Directions

Cut the polenta into ½ inch slices then cut the slices into quarters.

Heat the oil in a large skillet over medium-high heat. Add the polenta and fry, turning occasionally, until golden brown, about 5 minutes. Remove the polenta from the pan and reserve.

Add the sausage, red peppers, onion, garlic, and Italian seasoning and cook until the vegetables are soft and the sausage is cooked through, about 10 minutes. Add the reserved polenta back into the pan with the Parmesan cheese and heat through. Stir in the chives and serve.
