Kale Waldorf Salad

Ingredients

  • ½ cup extra-virgin olive oil
  • ¼ cup sherry vinegar or red wine vinegar
  • 1 teaspoon kosher or fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • 6 cups chopped kale
  • ½ cup raisins
  • 2 medium red apples cored and chopped
  • ½ cup toasted walnut pieces

Instructions

  • Whisk together the oil, vinegar, salt, and pepper. Place the kale in a serving dish with the raisins. Add the dressing and toss to coat. (Can be made ahead up to this point and stored, covered, in the refrigerator for up to 4 hours.)
  • Before serving, add the apples and walnuts and toss to combine.
