Sweet Cabbage Crunch Chicken Salad

The beautiful purple cabbage adds nutrient density to this salad and the chicken adds a punch of protein. My kids love this one because of the combination of sweet and tangy flavors. I love it because, not only is it loaded with healthy ingredients, but it also holds up really well and tastes great the next day!

Sweet Cabbage Crunch Chicken Salad

Ingredients

  • 1 cooked rotisserie chicken meat pulled off the bones and diced into bite-sized pieces
  • ½ medium red cabbage thinly sliced
  • ½ cup diced apple
  • ½ cup sugar snap peas chopped
  • ½ cup dried cranberries or golden raisins
  • ½ cup pine nuts chopped pistachios, or slivered almonds
  • ¼ cup raw apple cider vinegar
  • ¼ cup coconut oil melted and cooled
  • 3 tablespoons mayonnaise or vegan mayonnaise
  • 3 tablespoons pure maple syrup
  • ¼ teaspoon kosher or fine sea salt or more to taste

Instructions

  • Place the chicken, cabbage, apples, peas, cranberries or raisins, and nuts in a salad bowl. Toss to combine.
  • In a blender, combine the vinegar, oil, mayonnaise, maple syrup, and salt. Blend until smooth. Pour the dressing over the salad and toss to coat. Cover and refrigerate for at least 1 hour or up to overnight.
