Gluten Free Apricot Chicken

Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1 11 ounce jar apricot jam
  • 1 teaspoon dried onion flakes
  • 1 tablespoon Dijon mustard
  • 1 tablespoon gluten-free soy sauce
  • ¼ teaspoon ground ginger
  • ¼ -½ teaspoon crushed red pepper flakes
  • Hot steamed rice for serving

Instructions

  • Place all ingredients except the rice into a large plastic food storage bag. Seal the bag well and place in the freezer. When it comes time to cook, thaw overnight in the refrigerator, and empty the contents of the bag into a 4-quart slow cooker. Cover and cook on low for 6-7 hours, or on high for about 4 hours. Serve over hot steamed rice.

    I love this recipe. If you can use measuring spoons, you can make it.

    It’s easy and tastes good. All it needs is a little steamed broccoli to make it a complete meal.
