Chicken Meatballs with Pineapple Dipping Sauce Recipe

This healthy version of baked chicken meatballs uses gluten-free oats instead of breadcrumbs. They are tender and juicy and very easy to make. The pineapple dipping sauce is the perfect sweet accompaniment to these. I also make these as a meal occasionally for our family and serve them with the sauce over rice.

Gluten Free Chicken Meatballs with Pineapple Dipping Sauce Recipe

Ingredients

For the sauce:

  • 4 tablespoons ketchup
  • ¼ cup gluten-free tamari soy sauce
  • 1 tablespoon minced fresh ginger
  • ½ small pineapple finely diced
  • ½ cup pineapple juice
  • 1 tablespoon minced garlic
  • ½ teaspoon red pepper flakes
  • 2 tablespoons honey
  • ¼ teaspoon kosher or fine sea salt
  • ¼ teaspoon freshly ground black pepper

For the meatballs:

  • 2 pounds ground chicken
  • 1 large egg beaten
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons tomato paste
  • 1 large shallot minced
  • 3 garlic cloves minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • ½ teaspoon kosher or fine sea salt
  • ½ teaspoon freshly ground black pepper
  • cup gluten-free rolled oats

Instructions

  • Preheat the oven to 400°F.
  • In a saucepan, bring all the ingredients for the pineapple dipping sauce to a low boil. Lower the heat and simmer for 6-8 minutes. Watch carefully so it does not burn.
  • In a large bowl, combine the ground chicken, egg, olive oil, tomato paste, shallot, garlic, paprika, onion powder, red pepper flakes, salt, and pepper.
  • In a small food processor, pulse the oats until coarsely ground. Add to the bowl.
  • With clean hands, mix together all of the meatball ingredients until loosely combined. Form the chicken into 1-inch balls and roll in your hands until round and smooth. Arrange the balls on a parchment-lined baking sheet and bake in the oven until cooked through and beginning to brown on the bottom, about 20 minutes.
  • Pour the dipping sauce into a serving bowl. Serve meatballs alongside the sauce and provide toothpicks to assist with the dipping.
