Exciting Gluten Free All Purpose Flour News
I have an exciting announcement to make but first, a little story.
As many of you may know, I sell an all-purpose, pastry-quality, gluten free flour blend. It is called Carol’s Gluten Free All-Purpose Flour. I never intended to go into the gluten free flour business.
When I was writing my first cookbook, Simply Gluten Free Desserts, I went out and bought all the gluten free flour blends I could get my hands on. The idea was to find one that I could recommend in the book for making desserts that called for flour.
The problem was that I didn’t care for any of them; they were either gritty and grainy, tasted weird, or didn’t work recipe for recipe. So, I took a little time off from cookbook writing and started researching and experimenting. After a couple months of painstaking tweaking, I came up with a blend I thought was perfect. Even though I am very picky, I didn’t only want my opinion, so I asked for help.
A friend of mine is a Le Cordon Bleu trained chef. In his words, he is the opposite of gluten free. I asked him to test out my flour as rigorously as he could. He made pancakes, muffins, cupcakes, pastries, cakes, and more and after two weeks of testing, he gave me a big thumbs up!
So I started selling my flour on this site. To be honest, it was a lot more trouble than it was worth. And I thought about ceasing to produce the flour and just get on with what I do best – recipe development. But every time I contemplated quitting, I would get a letter like this:
“I recently purchased your Gluten Free All-Purpose Flour for my son and it is truly life-changing. You see, Andrew was diagnosed with Celiac Disease 10 years ago last month, at 18 months of age. He was the first child in our area diagnosed with the condition, making it very difficult to get any information for treating him. His condition is what inspired me into going into nursing school and in many ways has changed my family’s lives for the better. However, there have been many challenges along the way.
