Gluten Free Ice Cream Sliders Recipe

As America celebrates her independence this year, I say we get a little independence from the kitchen as well. I love the 4th of July and the fireworks and barbecues with all that yummy food. But there is no reason all the yummy food need take a lot of time and work, especially when it comes to dessert.

These little gluten free ice cream sliders are so easy to make and everyone loves them! Plus, you can customize them any way you like.

You start with two Kinnikinnick gluten free vanilla wafers, sandwich a small scoop of the ice cream of your choice, and then roll them in mini chocolate chips, sprinkles, chopped nuts…

I like these Neapolitan flavors, vanilla cookies, strawberry ice cream, mini chocolate chips. To make them even more Fourth friendly, try rolling them in red, white, and blue sprinkles. So festive. So delicious!

Fast and easy gluten free ice cream sliders

Gluten Free Ice Cream Sliders Recipe


1 cup mini semisweet chocolate chips, dairy-free chocolate chips, chopped nuts, or sprinkles
1 pint ice cream or dairy free ice cream
32 Kinnikinnick gluten-free vanilla wafer cookies


Place the chocolate chips, nuts, or sprinkles on a small plate. Line a plate or sheet pan with waxed paper.

Using a small (1 tablespoon or ½ ounce) ice cream scoop, place a scoop of ice cream on the flat side of a cookie. Top with another cookie, placing the flat side on the ice cream. Press together gently. Roll the edges in chocolate chips, nuts, or sprinkles and place on the prepared plate. Repeat with remaining ingredients. Place the sliders in the freezer for at least 1 hour before serving.
