If you’ve been gluten free for a little while, chances are you’re familiar with various gluten free grains. Grains like quinoa, sorghum, and millet may not have been in your pantry – or your vocabulary – until you started scouting out the gluten free foods that are safe for you to eat.

(Fun fact: botanically, quinoa and millet are seeds, but in the culinary world they are considered grains!)

Millet is one that I’ve recently taken more interest in. It’s a nutritious grain that is high in copper, manganese, and magnesium, plus has fiber and other whole grain goodness.

Millet is also very versatile – it can be cooked like rice or made into a porridge or even fermented and turned into alcohol. But what I’ve come to enjoy is millet in gluten free bread. It adds interest and a whole new level of texture to breads. Case in point – Little Northern Bakehouse.

This company makes gluten free, non-GMO, plant-based, allergy friendly bread loaves, hot dog buns, and hamburger buns. All except one variety includes millet, making for an extra boost of nutrition. I recently tried this bread and love not only the product but how the company has made me fall in love again with sandwiches.

Their website and social media platforms contain tons of mouth-watering photos for sandwich, hot dog, hamburger, and toast inspiration. That’s where I found the recipe below, which is delicious! It reminds me of a gluten-filled sandwich that my local grocery store deli makes around the holidays and that I never could try. Now I can, and you can, too.

Cranberry Relish Sandwich by Little Northern Bakehouse

Gluten Free Grilled Cranberry Relish Sandwich

Ingredients

2 slices Little Northern Bakehouse Gluten Free Millet & Chia Bread
2 tablespoons Balsamic Cranberry Relish
¼ cup vegan mozzarella-style shreds
Handful spinach leaves
4 sage leaves
Coconut oil or vegan buttery spread

Directions

Preheat a sandwich maker.

Spread cranberry relish on each slice of bread. Top one slice of bread with vegan shreds, spinach, sage, and the other slice of bread.

Spread coconut oil or buttery spread on the outside of both bread slices and grill on the sandwich maker until browned and warmed through.

Servings

Serves 1
