  • 2 cups mashed potatoes
  • 1 large egg
  • ¼ cup gluten-free all-purpose flour
  • ¼ cup minced chives plus more for serving
  • Kosher or fine sea salt to taste
  • Freshly ground black pepper to taste
  • 2 tablespoons olive vegetable, or coconut oil
  • Sour cream for serving if desired
  1. Combine the potatoes, egg, flour, and ¼ cup chives and mix well. Taste and add salt and pepper, if needed. Form into patties, using about ¼ cup per patty.
  2. Heat oil in a large skillet over medium heat. Fry the pancakes about 2 minutes per side or until golden brown and warm.
  3. Serve, topped with sour cream and chives, if desired.
