Gluten Free Faux Sous Vide Egg Bites Recipe

Sous vide is a cooking method that uses a temperature controlled water bath. This recipe utilizes a similar technique, without having to buy a sous vide device.

Ingredients
  • Vegetable oil or gluten-free nonstick cooking spray
  • 8 large eggs
  • ½ cup cottage cheese
  • ½ cup heavy cream
  • cups shredded cheese of choice divided
  • 3 tablespoons chopped chives chopped, then measured
  • 1 teaspoon kosher or fine sea salt
  • ½ teaspoon freshly ground black pepper
Instructions
  1. Preheat the oven to 350°F. Lightly grease 8 (1-cup) ovenproof glass ramekins or wide mouth half pint Mason jars.
  2. Combine eggs, cottage cheese, heavy cream, ¾ cup cheese, chives, salt, and pepper in a blender and blend until smooth. Pour ½ cup of the mixture into each ramekin or jar. Sprinkle the remaining shredded cheese on top of each egg bite.
  3. Place in a high-sided baking pan and fill the pan with hot water, coming halfway up the sides of the ramekins or jars. Bake for 30-35 minutes or until set and golden brown.
  4. Can be stored, covered, in the refrigerator for up to 2-3 days. If desired, microwave for 30 seconds before eating.
