Allow me to add a simple one into the mix – Gluten Free Easter Egg Nests – so you don’t have to spend as much time scrolling through Pins to decide what to make with the kids this year.

This recipe uses only a handful of ingredients, some of which you’ll already have in your pantry and others you may have lying around the house for other Easter activities you’ll be doing. The most important ingredients in this recipe are the eggs and coconut. Start with good quality eggs – like those from Nature’s Yoke – and add organic coconut (look for brands that practice environmental sustainability). Follow it up with the fun part – food coloring, chocolate, and jelly beans, and you’ve got a delicious and fun treat for you and the kids.

If your kids have sensitivities to food coloring or to high fructose corn syrup (or other ingredients that may be in jelly beans), there are more natural options for these products available online and in health food stores.

Ingredients
  • Gluten free nonstick cooking spray
  • 4 large egg whites
  • 1 (14-ounce) bag sweetened coconut
  • ½ teaspoon kosher or fine sea salt
  • Green food coloring optional
  • ½ cup semisweet chocolate chips
  • Jelly beans
Instructions
  1. Preheat the oven to 300 degrees. Spray a 24-tin mini muffin pan with cooking spray.
  2. Combine egg whites, coconut, and salt in a mixing bowl and stir with a fork until well combined. If desired, add the food coloring, a few drops at a time until desired color is achieved.
  3. Drop 2 tablespoons of the mixture into each tin. Lightly press the mixture into the bottom and up the sides of each tin. Bake for 28-30 minutes or until set and lightly golden brown. Let cool in the pan on a cooling rack for 10 minutes. Remove from pan and let cool completely.
  4. Melt the chocolate in the microwave for 1-2 minutes, stirring every 30 seconds. Divide the chocolate among the cooled nests. Let the chocolate set for about 30 minutes before adding jelly beans.
