Gluten Free Spicy Noodles Recipe

How do you feel about spicy food? Do you crave it like I do? Sometimes you just need a nice kick to your food … and that’s where recipes like this Gluten Free Spicy Noodles recipe come into play. This dish is seriously delicious and seriously simple!

Start with red lentil spaghetti from Explore Cuisine. This pasta is full of protein and flavor! While that boils, chop the cilantro, peanuts, green onions and red chili. Once the pasta is done you simply heat up the oils and make the dressing, then you toss everything together and refrigerate for as little as 1 hour or up to overnight.

Ingredients

  • Kosher or fine sea salt
  • 2 (8-ounce) boxes Explore Cuisine red lentil spaghetti
  • ½ cup plus 1 tablespoon vegetable oil
  • ¼ cup sesame oil
  • 1 tablespoon red pepper flakes
  • 6 tablespoons honey
  • 5 tablespoons tamari
  • 1 bunch cilantro chopped
  • ¾ cup roasted salted peanuts chopped
  • 4 green onions sliced
  • 1 tablespoon sesame seeds
  • 1 red chili (such as a Fresno chili), thinly sliced

Instructions

  • Bring a large pot of salted water to a boil. Cook the spaghetti according to the package directions. Drain, rinse with cold water and toss with 1 tablespoon vegetable oil.
  • Heat the remaining ½ cup vegetable oil with the sesame oil until warm. Add the red pepper flakes, honey, and tamari and toss with the pasta in a large bowl. Reserve half the cilantro and a handful of the peanuts to garnish. Add the rest to the pasta along with the green onions, sesame seeds, and sliced chili. Cover and refrigerate for 1-4 hours or overnight. To serve, garnish with the reserved cilantro and peanuts.

    This looks delicious!!! I so love and miss Pasta!! I am hesistant to try Lentil pasta after having it once before and winding up glutened. Ugh…cross contamination at the pasta company.

      Yeah, cross contamination is definitely not fun and it can make you distrust certain foods, but just look for brands that are certified gluten free and made in dedicated GF facilities to be on the safe side. The brand I used here is certified GF.
