Easy Gluten Free Pistachio Cookies Recipe

These cookies start with Kinnikinnick’s gluten free white cake mix and pistachio pudding mix as the base and are dotted with salty, roasted pistachios. The result is utterly amazing!
This is a one-bowl recipe, which means clean-up will be effortless, but it will look like you spent hours on these because they are just that impressive-looking! Something about the pastel green color that is surprisingly elegant and fun.

- 1 box Kinnikinnick gluten free white cake mix
- 1 box instant pistachio pudding mix
- 2 large eggs
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- 1½ cups chopped roasted and salted pistachios
Preheat the oven to 350 degrees. Line two baking sheets with parchment paper or a silicone baking mat.
In the bowl of a mixer fitter with the whisk attachment, combine the cake mix, pudding, eggs, oil, and vanilla. Mix on medium speed for 2 minutes. Stir in the pistachios.
Scoop the dough onto the prepared baking sheets using a small ice cream scoop, spacing an inch apart. Bake for 10-12 minutes or until set and just starting to brown around the edges. Let cool.
