Ingredients
  • 1 box Kinnikinnick gluten free white cake mix
  • 1 box instant pistachio pudding mix
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • cups chopped roasted and salted pistachios
Instructions
  1. Preheat the oven to 350 degrees. Line two baking sheets with parchment paper or a silicone baking mat.
  2. In the bowl of a mixer fitter with the whisk attachment, combine the cake mix, pudding, eggs, oil, and vanilla. Mix on medium speed for 2 minutes. Stir in the pistachios.
  3. Scoop the dough onto the prepared baking sheets using a small ice cream scoop, spacing an inch apart. Bake for 10-12 minutes or until set and just starting to brown around the edges. Let cool.
