Ingredients
  • 16 medium-large new potatoes , cut into 1-inch chunks
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon finely chopped fresh rosemary
  • 1 tablespoon finely chopped fresh thyme
  • Kosher or fine sea salt
  • Freshly ground black pepper
  • ¼ cup finely chopped parsley
Instructions
  1. Preheat the oven to 350ºF. Line a baking sheet with parchment paper.
  2. In a large bowl, toss together the potatoes, olive oil, rosemary, and thyme. Season with salt and pepper. Spread out on the baking sheet and roast for 40-45 minutes, or until tender. Transfer to a serving dish and garnish with parsley.
