Celebrate Cinco de Mayo with a gluten-free recipe

Celebrate Cinco de Mayo with this fun and simple recipe using three of our favorite gluten-free products.

This gluten-free fiesta mac & cheese is made with Gabriella’s Kitchen Superfood Teff Macaroni, Hatch Chile’s green chile peppers, and topped with jalapeño flavored ParmCrisps.

The inspiration for this recipe came from my Tex Mex Skillet Mac & Cheese. To make this version, follow the steps in that recipe but sub the spiral pasta for teff macaroni for added fiber and nutrients and instead of tomatoes and chiles, use green chiles (Hatch also makes a tomato and green chile product but I only had the green chiles on hand) – then top it all with ParmCrisps for an unexpected crunch!

This is a simple dish that can be whipped up just in time for Cinco de Mayo. Serve with a margarita made with silver tequila and you have yourself a fast fiesta!

Gluten Free Cinco de Mayo Mac & Cheese

Gabriella’s Kitchen is a brand that uses superfood grains to create better-for-you pastas. Teff is naturally gluten-free and a good source of protein, fiber, iron, zinc, copper, and manganese. ParmCrisps is a brand you’ve probably seen me write about a lot by now, and that’s for good reason! They are delicious crisps made of Parmesan cheese and simple herbs and seasonings. They are keto-friendly, contain 0 carbs, and are a good source of protein. They make great snacks or can be used in recipes, like this tasty gluten-free fiesta mac and cheese.
