  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon kosher or fine sea salt
  • 8 cups watermelon, cut into 1-inch pieces (from a small seedless watermelon)
  • 12 ounces fresh blueberries
  • ¼ cup fresh mint leaves
  • 8 ounces feta cheese, cut into small dice
  1. In a large mixing bowl, whisk together the lemon juice, olive oil, and salt. Add the watermelon, blueberries, and mint. Toss to coat. Can be made up to 2 hours ahead to this point. Cover and refrigerate.
  2. Just before serving, stir in the feta cheese.
