  • ½ cup olive oil
  • ¼ cup balsamic vinegar
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • Salt and pepper , to taste

Chicken & Cinnamon Apple Salad

Greens: arugula
Vegetables: carrots, onions, and celery
Fruits: chopped apples tossed with a spritz of lemon juice and pinch of cinnamon
Protein: chicken
Extras: dried cranberries and toasted pecans
Dressing: Balsamic Vinaigrette
