Honey Chipotle Dressing Recipe

There’s nothing like a new year to make us all hop on the salad train. Healthier diets, weight loss goals, or just the desire to get more veggies into our daily diets are all perfectly acceptable reasons to make salads a focal point. But, salads can be boring. Unless proper proportions of vegetable, crunch, leafy, creamy, and protein are in order, then salads can fall flat. A good way to help make salads tastier is to punch up the dressing with something a bit more unique. This Honey Chipotle Dressing is a perfect example.

This dressing using chipotle puree made from chipotle in adobo sauce. Chipotle in adobo sauce is sold in cans in Latin markets or in the ethnic section of the grocery store. They are smoked jalapeño peppers stewed in a sauce of tomatoes, garlic, vinegar and spices. Be careful to read the ingredients on the can as not all chipotle in adobo are gluten-free.

To balance the chipotle, I add honey (I use organic honey from Wholesome) and lime juice. A few additional ingredients and just like that, you’ve got yourself a zesty dressing that is perfect for jazzing up any salad!

Ingredients
  • ½ cup olive oil
  • ¼ cup fresh lime juice (from 2-3 limes)
  • ¼ cup chopped fresh cilantro leaves
  • 4 teaspoons pureed chipotle in adobo sauce (see note)
  • 2 teaspoons Wholesome Organic Honey
  • 1 teaspoon ground cumin
  • ¾ teaspoon kosher or fine sea salt
  • ¼ teaspoon fresh black pepper
Instructions
  1. Combine all ingredients in a mason jar and shake well to combine. Can be stored in the refrigerator for 1 week, covered.
Recipe Notes

Note: Puree a jar of chipotle in adobo sauce in a blender and store, covered, in the refrigerator for up to 6 months. Can be stirred into soups, stews, taco meat, chili, etc.
