Thai Coconut Beef
If you’re looking for an easy, simple restaurant recipe to re-create, then this Thai Coconut Beef recipe is perfect for you! It only uses five simple ingredients and is made in the slow cooker. This is a great recipe to try at home rather than worry about cross contamination or whether a dish is made fully gluten-free!
- 2 pounds lean beef stew meat
- 1 (8-ounce) jar gluten-free peanut satay sauce (I used the Thai Kitchen brand)
- 1 (13.5-ounce) can full-fat coconut milk
- 16 ounces baby carrots
- ¼ cup chopped peanuts
Use a 4-quart slow cooker. Place the stew meat into the slow cooker insert and add the entire bottle of peanut satay sauce and the can of coconut milk. Stir well to combine. Place baby carrots on top.
Cover, and cook on low for 8 hours, or until meat is fork-tender. Serve with chopped peanuts on top.
We serve ours over a bed of white basmati rice for a more complete meal.
