  • 2 pounds (1 kg) thin cut stir fry beef
  • 1 onion , peeled and sliced
  • 2 bell peppers , seeded and sliced (1 yellow, 1 orange)
  • 1 packet fajita seasoning mix (McCormick is gluten-free, or use recipe listed below)
  1. Place all ingredients into a zippered freezer bag or freezer container. Freeze until ready to use.
  2. Defrost the bag the night before in the refrigerator and dump contents into your slow cooker in the morning. Add ½ cup of water.
  3. Cover and cook on low for 8-9 hours, or on high for 6 hours. The meat is done when it reaches desired tenderness. Serve on gluten-free tortillas.
Recipe Notes

Homemade Fajita Seasoning:
2 teaspoons (5 g) chili powder
1 teaspoon (6 g) kosher or fine sea salt
1 teaspoon (4 g) granulated sugar
1 teaspoon (2.3 g) paprika
½ teaspoon (1.5 g) onion powder
½ teaspoon (1.5 g) garlic powder
¼ teaspoon (0.5 g) cayenne pepper

Combine all ingredients in a small bowl or sealable container.
