Ingredients

  • 1 cup (115 g) diced red onion
  • 2 cups (240 g) diced cucumber
  • ½ cup (90 g) chopped Greek olives
  • 1 cup (175 g) grape or cherry tomatoes , halved
  • 3-4 chicken breasts , cooked and shredded
  • 4 cups (75 g) chopped romaine lettuce

For the Creamy Herb Dressing:

  • cup (160 mL) plain Greek yogurt or coconut yogurt
  • ¼ cup (60 mL) lemon juice
  • 2 tablespoons (30 mL) olive oil
  • 2 cloves garlic , minced
  • ¼ cup (6 g) finely chopped fresh dill
  • Pinch of kosher or fine sea salt

Instructions

  • Whisk all the dressing ingredients together.
  • Divide the salad ingredients among 4 quart-sized (32-ounce) jars, layering in the following order: 2-3 tablespoons of dressing in the bottom of each jar, followed by the onions, cucumbers, olives, tomatoes, chicken, and lettuce. Screw on lids and keep chilled until ready to serve. For easy eating, pour into bowls to serve.
  • Optional: Bring a separate container of feta cheese with you on your picnic and sprinkle on the salads before eating, if desired.
