Ingredients
  • 2 pounds (1 kg) pork tenderloin, cut into 1-inch cubes
  • 1 tablespoon (8 g) chili powder
  • 1 teaspoon (3 g) garlic powder
  • 2 teaspoons (4.6 g) smoked paprika
  • 1 teaspoon (2.6 g) ground cinnamon
  • teaspoons (9 g) kosher or fine sea salt
  • 2 tablespoons (30 mL) extra-virgin olive oil, plus more for greasing
  • 2 large green apples , cored and cut into 1-inch cubes
  • 1 large red onion , cut into 1-inch pieces
  • 8 metal or bamboo skewers
Instructions
  1. Combine the pork, chili powder, garlic powder, smoked paprika, cinnamon, salt, and olive oil in a large bowl and mix well to combine. Cover and marinate in the refrigerator for at least 1 hour or up to 8 hours.
  2. If using bamboo skewers, soak for at least 1 hour prior to cooking. Thread the pork, apple, and onion pieces in alternating layers on each skewer.
  3. Preheat the grill to medium-high heat, and oil the grate. Grill the skewers for about 8-10 minutes, turning occasionally, until the pork is cooked through and the apples are tender. Serve immediately.
