From the woman (me) who brought you zucchini bread comes another summer-inspired gluten-free bread recipe you’ll definitely love! This Grain & Sugar-Free Peach Quick Bread recipe is divine and simple and bursting with fresh peach flavor.

What makes this grain-free is the use of almond flour. This creates a dense bread, so expect a loaf that is moist and soft like banana bread, not light and airy like sandwich bread. What makes this sugar-free is the use of Swerve, a cup-for-cup, zero calorie, non-glycemic sugar alternative that has no “off” aftertaste.

If you want to take this bread to another (equally delicious) level, slice it into half-inch thick slices after it’s cooled and place the slices on a baking sheet and toast in a 400 degree oven (or on a tray in a toaster oven) for about 10 minutes or until the bread is lightly crispy. Spread some mascarpone cheese (or light, softened cream cheese) in a thin layer on top and serve. You can also add your favorite jam to the top of the mascarpone cheese, if desired.

Ingredients

  • 4 peaches , divided
  • 2 cups finely ground almond flour
  • ½ cup Swerve Granular
  • 1 teaspoon baking soda
  • ½ teaspoon kosher or fine sea salt
  • 2 large eggs , lightly beaten
  • ¼ cup melted butter or dairy free butter substitute
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon Swerve Confectioners

Instructions

  • Preheat oven to 325 degrees. Grease a 9 by 5-inch loaf pan.
  • Bring a large pot of water to a boil and have a bowl filled with ice water nearby. Plunge the peaches into the boiling water for 15 seconds them remove to the ice water. Let sit in the ice water for a few seconds then remove. This will make the peaches easy to peel. Peel the peaches, remove pits, and slice 1 peach and dice the rest.
  • In a large mixing bowl, whisk together the almond flour, Swerve Granular, baking soda, and salt. Add the diced peaches, eggs, butter, and vanilla and stir well. Put the batter into the prepared pan, smooth the top, and place the peach slices on top. Sprinkle with the Swerve Confectioners. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes then remove to a wire rack to finish cooling.

    Can I use frozen peaches?

      Hi Donna,

      Yes, frozen should work, just thaw them first and maybe pat them lightly with a paper towel to absorb a bit of the moisture from thawing.
