Gluten-Free Fig Clafoutis

We’re in the middle of fig season, and it’s glorious! Well, technically there are two fig seasons – one around June and another between August and October. I don’t know about you, but I love figs and have found great use for them recently – in desserts and in appetizers. For the Nov/Dec issue of the magazine, I made these amazing figs stuffed with goat cheese as part of my 5-ingredient starters article. You’ll have to wait until that issue comes out to get that recipe, but in the meantime, here’s an amazing dessert recipe made with figs – a Gluten-Free Fig Clafoutis.

A clafoutis, pronounced clah-foo-tee, is a traditional French dessert with a thick batter and fruit (usually black cherries but I’ve made several variations) baked in a buttered dish. In this recipe, I’ve added some dairy-free options, if needed. I used Wholesome Organic Sugar to add just the right amount of sweetness, starting with a butter/sugar layer at the base and ending with a light sprinkling of sugar on top! This dessert is easy, yet elegant and sophisticated. It’s perfect for a special dinner with friends or family, or a romantic date night.

Ingredients

  • 1 cup half-and-half or full-fat coconut milk
  • ½ cup plus 2½ tablespoons Wholesome Organic Sugar , divided
  • 6 tablespoons all-purpose gluten-free flour blend
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • ¼ teaspoon kosher or fine sea salt
  • 2 tablespoons melted butter or dairy-free substitute
  • 12 ounces fresh figs , stems removed and halved lengthwise

Instructions

  • Combine the half-and-half, ½ cup sugar, flour, eggs, vanilla, and salt in a blender and blend on medium-high speed until fully combined. Let the batter sit at room temperature for 30 minutes.
  • Preheat the oven to 425 degrees. Generously brush a 9-inch deep dish pie plate, baking dish, or cast-iron skillet with the melted butter. Sprinkle 2 tablespoons of sugar over the top of the butter.
  • Give the batter one quick pulse in the blender. Pour the batter into the prepared dish. Place the figs into the batter, cut side up. Sprinkle with the remaining ½ tablespoon sugar.
  • Bake for 15 minutes. Reduce the oven temperature to 375 and bake another 10-15 minutes or until golden brown and puffed.
