Ingredients

  • 4 cups (950 mL) gluten-free chicken broth
  • 3 cups (90 g) baby spinach
  • 2 cups (280 g) cooked chicken, shredded
  • 2 (15-ounce/425-gram) cans white beans, rinsed and drained
  • cup (80 mL) prepared pesto, plus more for serving
  • Kosher or fine sea salt
  • Freshly ground black pepper

Instructions

  • Combine the broth, spinach, chicken, and beans in a Dutch oven or soup pot. Cover and heat over high until the soup just comes to a boil. Remove lid, reduce heat to medium, stir in ⅓ cup pesto, and let simmer uncovered for 2-3 minutes. Season to taste with salt and pepper. Serve with a drizzle of more pesto, if desired.
