Ever seen that show on the Discovery Channel called Naked and Afraid? Every week a couple of strangers (one man and one woman) are plopped down in a hostile environment for 21 days and must learn to survive together with no food, water, tools, or clothes. Even the thought of doing something like this is so far out of my comfort zone it hasn’t even been charted on my comfort zone map.
I know that I if I were in that position I should concentrate on essential things such as how to find water, food, and shelter. How to fashion something to wear out of leaves or whatever. How to avoid snakes. How to, you know, survive
Just because the lazy days of summer are gone and fall is here in all her glory is no reason, in my humble opinion, to stop eating ice cream!
Sweet potatoes and coconut milk make for a fabulous dairy free autumn ice cream. So simple to prepare, so delicious to eat!

Tis the season for all things pumpkin; every store I walk into these days reminds me of a pumpkin patch at harvest time.
There are many in our family that regards pumpkin as a favorite flavor. In fact recently we had four generations all seated around the table discussing the attributes of pumpkin pie. My g-kid Julian is a big fan and always requests it for dessert.
Unfortunately I don’t always have time to whip up a gluten free pumpkin pie. But I do always have time to whip up this tasty dessert – Almost Instant Pumpkin Mousse. This recipe takes about 5 minutes to prepare and really could not be simpler.

Chocolate mousse may just be the perfect naturally gluten free dessert. Then again, it may not. What makes it perfect is the creamy, silken texture, the rich luscious flavor and of course, the chocolate. What makes it not perfect is all that whisking, the uncooked eggs and the waiting.
