Birthday Cake Doughnuts

There is no shame in taking a little shortcut now and then when it comes to gluten-free baking. With a few tricks, you can make something completely different, as we have with our Birthday Cake Doughnuts (from a boxed cake mix.)

Gluten Free Birthday Cake Doughnuts


Gluten-free nonstick cooking spray
1 package gluten-free cake mix (flavor of choice)
1 cup water
1 large egg
¼ cup vegetable oil
1 teaspoon pure vanilla extract
1½ cups powdered sugar, measured then sifted
1 tablespoon unsalted butter or dairy-free butter substitute, melted
Food coloring of choice
2-4 tablespoons milk or dairy-free milk


Preheat the oven to 350°F. Spray doughnut pans with cooking spray.

Combine the cake mix, water, egg, oil, and vanilla in a mixing bowl and whisk well. Pour the batter into a large food storage bag and snip about ¼ inch off one corner. Squeeze the batter into the prepared pans, filling about halfway full. Bake for 12-14 minutes. Let cool in the pans for 5 minutes, then transfer to a wire rack placed over waxed paper to finish cooling.

Place the powdered sugar in a mixing bowl, add the melted butter, and a drop or two of food coloring, if desired. Stir in enough milk to bring to the desired consistency.

Drizzle the glaze over the cooled doughnuts and top with sprinkles.

Makes 18 gluten free donuts
