Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons butter or dairy-free substitute
  • 1 pound green beans trimmed
  • cups cherry or grape tomatoes halved
  • 2 garlic cloves minced
  • 1 tablespoon balsamic vinegar
  • Kosher or fine sea salt
  • Freshly ground black pepper

Instructions

  • Heat a large skillet over medium-high heat for 3 minutes. Add the oil and butter. When the butter has melted, add the green beans, tomatoes, and garlic. Let sit for 90 seconds, undisturbed. Toss and cook for another 2-3 minutes or until the beans are crisp-tender and the tomatoes start breaking down. Add the vinegar, season to taste with salt and pepper, toss to coat, and serve.
