Gluten Free Vegetarian Faux Sushi Recipe

Ingredients

8 ounces whipped cream cheese or dairy-free cream cheese, softened
6 large gluten-free wraps
1¼ cups mixed salad greens
3 carrots, peeled and julienned
1 English cucumber, cut in half, seeds scraped out, and julienned

Directions

Spread a layer of cream cheese on each tortilla. Divide the rest of the ingredients evenly and place down the middle of each tortilla, allowing some of the veggies to extend past the edge of the tortilla on either side. Roll the tortilla as tightly as you can, then wrap in plastic wrap and refrigerate for at least 1 hour or overnight.

Unwrap the tortillas, then slice each one in half. Line up the halves and cut them in half again. Stand the pieces on their ends to serve.

Summer Frittata

Ingredients

2 tablespoons extra-virgin olive oil
1 medium zucchini, diced
1 medium red bell pepper, seeded and diced
½ large red onion, diced
1 garlic clove, minced
1 large tomato, seeded and chopped
10 large eggs
1 teaspoon kosher or fine sea salt
½ teaspoon freshly ground black pepper
½ cup crumbled feta cheese or
dairy-free cheese of choice
½ cup chopped fresh basil leaves

Directions

Heat the oil in a large oven-safe skillet over medium heat. Add the zucchini, bell pepper, onion, and garlic and cook until tender, 6-7 minutes. Add the tomato and cook, stirring, until the tomato releases liquid and the liquid has cooked off, about 3 minutes.

Whisk the eggs with the salt and pepper in a large bowl. Pour over the vegetables. Stir gently. Reduce heat to low, cover the pan, and cook until the eggs are almost set, about 10 minutes.

Heat the broiler to high and position the top rack 8 inches from the broiler. Sprinkle the feta over the top of the frittata and broil until the eggs are set. Sprinkle with basil and serve.

Apple-Pecan Bread Pudding

Ingredients

Gluten-free nonstick cooking spray
4 cups toasted gluten-free bread cubes (approximately 8 slices)
2 medium tart green apples, peeled, cored, and diced
¼ cup butter or dairy-free butter substitute, melted
½ cup coarsely chopped pecans
1 cup raisins
1 cup brown sugar
3 large eggs
2 cups milk or dairy-free milk
2 teaspoons pumpkin pie spice

Directions

Use a 2-quart slow cooker sprayed with cooking spray (or use an inserted loaf pan and water bath as described in the Steel Cut Oatmeal recipe).

Put the toasted bread cubes into your cooker and add the diced apples. Toss the bread and apples with the melted butter. Sprinkle in the pecans, raisins, and brown sugar. In a mixing bowl, whisk together the eggs, milk, and pumpkin pie spice. Pour evenly over the top. Cover and cook on low for 4-5 hours or on high for about 2½ hours. Your bread pudding is finished cooking when it has browned on top and pulled away from the sides. The center should be set and not jiggly. Serve warm.

Steel Cut Oatmeal

Ingredients

Gluten-free nonstick cooking spray
1 cup certified gluten-free steel cut oats
4 cups water
¼ cup milk or dairy-free milk
3 tablespoons brown sugar
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon

Optional toppings:
Diced fresh fruit
Honey
Cream or yogurt

Directions

Use a 6-quart slow cooker with an inserted 9×5-inch loaf pan that has been greased with cooking spray. Pour enough water around the base of the loaf pan to rise about halfway up the sides. (You are using the slow cooker as a bain-marie, or water bath, for this recipe to ensure your oats don’t dry out.)

In a large mixing bowl, combine the oats, water, milk, sugar, vanilla, and cinnamon. Pour the mixture into the prepared pan. Cover and cook on low for 7 hours, or until the oatmeal has set. Spoon into a serving dish and
top with fruit, honey, cream, or yogurt, if desired.
