Ingredients

  • 2 8- to 10-inch prepared gluten-free pizza crusts
  • 1 cup refried black beans
  • ½ cup prepared salsa
  • 1 cup shredded cheese or dairy-free cheese
  • 2 6-ounce chicken breasts, cooked and shredded
  • 1 cup frozen sweet corn
  • ½ finely chopped red onion
  • 1 cup micro greens or sprouts
  • ½ teaspoon garlic salt
  • 1 medium avocado pitted and thinly sliced
  • 3 tablespoons chopped fresh cilantro
  • 1 lime cut into wedges

Instructions

  • Preheat the oven to 400ºF. Line a baking sheet with parchment paper.
  • Place the crusts on the baking sheet. Divide the refried beans between the crusts and spread evenly. Divide the salsa between the crusts and spread evenly. Sprinkle the cheese over the crusts. Divide the chicken, corn, onions, micro greens, and garlic salt equally between the pizzas.
  • Bake for about 10 minutes or until the pizzas are warmed through and the cheese is melted and beginning to bubble.
  • Before serving, arrange slices of avocado on each pizza, top each with chopped fresh cilantro, and spritz with lime juice.
