Ingredients

  • Vegetable oil or gluten-free nonstick cooking spray
  • 2 large eggs
  • 2 tablespoons cottage cheese
  • 1 small scallion chopped
  • 4 grape tomatoes quartered
  • 2 teaspoons grated Parmesan cheese
  • Kosher or fine sea salt
  • Freshly ground black pepper

Instructions

  • Grease a microwave-safe mug with oil or spray with cooking spray. Add the eggs and beat lightly with a fork. Add the cottage cheese, green onion, tomatoes, and Parmesan cheese. Add a pinch of both salt and pepper.
  • Microwave on high power for 30 seconds, give the mixture a stir, and microwave for another 45-60 seconds or until the eggs are set.
