Ingredients
- Vegetable oil or gluten-free nonstick cooking spray
- 2 large eggs
- 2 tablespoons cottage cheese
- 1 small scallion chopped
- 4 grape tomatoes quartered
- 2 teaspoons grated Parmesan cheese
- Kosher or fine sea salt
- Freshly ground black pepper
Instructions
- Grease a microwave-safe mug with oil or spray with cooking spray. Add the eggs and beat lightly with a fork. Add the cottage cheese, green onion, tomatoes, and Parmesan cheese. Add a pinch of both salt and pepper.
- Microwave on high power for 30 seconds, give the mixture a stir, and microwave for another 45-60 seconds or until the eggs are set.
