Ingredients

  • 2 pounds baby Yukon Gold potatoes ¾-inch diameter, washed and unpeeled
  • 1 large white onion cut in half widthwise and each half cut into 6 wedges
  • 4 tablespoons unsalted butter cut into small pieces
  • 3 garlic cloves chopped
  • 1 teaspoon garlic powder
  • 2 teaspoons kosher or fine sea salt
  • 1 teaspoon freshly ground black pepper

Instructions

  • Heat a grill to medium, about 350-400ºF.
  • lace the potatoes into a cast-iron skillet in a single layer. Add the rest of the ingredients, stir well, and cover the skillet snugly with foil. Put the pan over indirect heat and cover the grill. Cook for 30 minutes, remove foil, stir, and cook uncovered for another 10 minutes or until the potatoes are tender.
  • To keep warm until serving, cover the pan with foil. The residual heat from the pan will keep the potatoes warm.
