Grilled Fennel & Sweet Potato Salad with Walnuts

Ingredients
- 2 pounds sweet potatoes sliced ¼-inch thick crosswise
- 1 large fennel bulb sliced ¼-inch thick lengthwise
- 4 tablespoons extra-virgin olive oil plus more to taste
- Sea salt to taste
- Freshly ground black pepper to taste
- 4 cups mixed salad greens
- 3 tablespoons dried cherries chopped
- 2 tablespoons chopped walnuts
- 2 tablespoons finely chopped fresh cilantro
- Juice of 1 lime
- 2 teaspoons apple cider vinegar
Instructions
- Heat a grill to medium. Combine the sweet potatoes, fennel, 4 tablespoons olive oil, salt, and pepper in a large bowl. Toss to coat evenly. Grill the vegetables over medium heat for 6 minutes on each side or until tender. Remove from grill.
- In a large bowl, toss together the greens, cherries, walnuts, cilantro, lime juice, and apple cider vinegar. Divide the salad and grilled vegetables between 4 plates and serve with additional olive oil, salt, and pepper for desired seasoning.
