Grilled Fennel & Sweet Potato Salad with Walnuts

Ingredients

  • 2 pounds sweet potatoes  sliced ¼-inch thick crosswise
  • 1 large fennel bulb sliced ¼-inch thick lengthwise
  • 4 tablespoons extra-virgin olive oil plus more to taste
  • Sea salt to taste
  • Freshly ground black pepper  to taste
  • 4 cups mixed salad greens
  • 3 tablespoons dried cherries  chopped
  • 2 tablespoons chopped walnuts
  • 2 tablespoons finely chopped fresh cilantro
  • Juice of 1 lime
  • 2 teaspoons apple cider vinegar

Instructions

  • Heat a grill to medium. Combine the sweet potatoes, fennel, 4 tablespoons olive oil, salt, and pepper in a large bowl. Toss to coat evenly. Grill the vegetables over medium heat for 6 minutes on each side or until tender. Remove from grill.
  • In a large bowl, toss together the greens, cherries, walnuts, cilantro, lime juice, and apple cider vinegar. Divide the salad and grilled vegetables between 4 plates and serve with additional olive oil, salt, and pepper for desired seasoning.
