Gluten Free Mint Cocoa

Ingredients

  • ¾ cup milk (I use 2%)
  • 1½ tablespoons cocoa or chocolate powder
  • ¾ ounce peppermint schnapps
  • ½ ounce Kahlua liqueur
  • Mini marshmallows, for serving

Directions

Prepare this cocktail on the stovetop whether you are making a single serving or a full pot for your guests.
  1. Pour the desired amount of milk (depending on how many servings you’re preparing) into a pot and warm it on medium-low until hot but not boiling.
  2. Add the desired amount of cocoa powder and stir well until all of the powder is incorporated and there are no clumps of powder left.
  3. Reduce the heat to low and add the desired amounts of peppermint schnapps and Kahlua liqueur.
  4. Stir well and serve garnished with marshmallows.
(To make this recipe in a slow cooker, just switch out the stovetop’s medium-low setting for the slow cooker’s low setting and the stovetop’s low setting for the slow cooker’s warm setting.)

As much as the taste of pumpkin reminds me of the holidays, so does a nice warm cup of cocoa. Every year we make the kids each a cup of hot chocolate on Christmas morning before we all gather around the Christmas tree and open presents. I created this recipe so that the adults could enjoy their own version of my childhood favorite.
