Jamaican Jerk Chicken Thighs

Ingredients

  • ½ medium yellow onion minced
  • 1 small jalapeño seeded and minced
  • 1 tablespoon honey
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons gluten-free tamari
  • 1 teaspoon ground allspice
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon dried thyme
  • ¼-½ teaspoon crushed red pepper flakes
  • 3 pounds boneless skinless chicken thighs

Instructions

  • Add all of the ingredients except the chicken to a large bowl. Stir to combine. Add the chicken and toss to coat. Place in a sealed bag or container and marinate for at least 2 hours or preferably overnight.
  • Heat a grill to medium. Grill the chicken for 2-3 minutes per side or until the internal temperature reaches 165ºF on a meat thermometer. (Everyone’s grill is a little different, so never walk away and always have a meat thermometer!) Serve with Balsamic Grilled Fruit
