Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 pound ground beef or turkey
  • 1 tablespoon ground cumin
  • 2 teaspoons mild chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher or fine sea salt
  • 1 head bibb or romaine lettuce or gluten-free tortillas of choice

Optional toppings:

  • Chopped tomatoes
  • Salsa
  • Chopped onions
  • Sour cream
  • Shredded cheese
  • Guacamole

Instructions

  • Heat the olive oil in a large skillet over medium-high. Add the meat and cook, crumbling up with a wooden utensil, until browned. Add the cumin, chili powder, garlic powder, and salt. Stir well to combine.
  • To serve immediately, cool the meat slightly and then place about 2 tablespoons into a leaf of lettuce (or use a gluten-free tortilla). Top with desired toppings.
  • To serve in a lunch box, package up the cooked meat in one container. Place the lettuce leaves or tortillas in another and the assorted toppings of your choice in another. Let your kids get creative and build their own tacos.
